White Stallion Ranch Oatmeal Pancakes

There is nothing quite like homemade pancakes on a lazy weekend morning. Why not make them healthier by adding the superfood oats! The folks over at White Stallion Ranch in Arizona have provided us this yummy recipe for Oatmeal pancakes.  This Oatmeal Pancake recipe is easy, delicious and healthy!

Oatmeal Pancakes

Ingredients

2 cups old-fashioned oats
2 cups buttermilk
3 beaten eggs
2 tablespoons sugar
4 tablespoons butter (not oil)
½ cup flour
1 teaspoon salt
1 teaspoon baking soda

Instructions:

  1. Combine oats and buttermilk and let stand overnight
  2. Combine the eggs, sugar and oil in a small bowl and beat together. Add to the oat/buttermilk mixture
  3. Add flour, salt and baking soda. Add a bit of cinnamon if you like!
  4. Cook on a hot griddle

Chocolate Satin Mint Cake

This delicious decadent dessert recipe is brought to you by the lovely folks over at Elk Mountain Guest Ranch in Colorado. The guest ranch is convenient 2.5 hour drive from Denver Airport. It's unique for it's spectacular location, horseback rides of unmatched beauty, large variety of activities and superb menu.

Filling:

1-8 oz. cream cheese
 ¼ cup sugar
 2 Tbsp. butter
 1 Tbsp. cornstarch
 1 egg
 2 Tbsp. milk
 ¾ tsp. peppermint extract

  1. Beat cheese, butter sugar and cornstarch.
  2. Add egg, milk and extract.  Mix until smooth.
Cake:

1 devils food cake mix
 1 cup water
 1/3 cup vegetable oil
 3 eggs

  1. Preheat oven to 325 degrees
  2. Spread 2 cups batter in a greased and floured bundt pan.
  3. Place a center tube of filling.
  4. Slowly pour remaining batter over filling.
  5. Bake at 325 for 55-60 minutes.  Cool
Glaze & Drizzle:

1/3 cup light corn syrup
1/3 cup whipping cream
 6 squares (1 oz.) semi-sweet chocolate squares, chopped
 2 squares (1 oz.) white chocolate squares, chopped
 2 tsp. vegetable oil
 ¼ tsp. peppermint extract

For glaze, bring corn syrup and whipping cream to a simmer, stirring constantly with whisk.  Remove from heat.  Add semi-sweet chocolate, stir until smooth.  Spread 2/3 cup glaze over top and side of cake.  Freeze cake for 5 minutes until glaze is set.  Meanwhile, keep remaining glaze warm over low heat.  Slowly pour over cake.  Let cool in refrigerator. For drizzle, microwave white chocolate and oil about 1 minute or until mixture is smooth when stirred.  Stir in extract.  Let cool and drizzle over cake.  Refrigerate.

Evil Chocolate Chip Cookies Recipe

Now who doesn't like chocolate chip cookies. Chocolate chip cookies are a classic favorite for all and especially these ones from Tod Mountain Ranch that are so sinful they are "evil". Make up a batch of these chocolate chip cookies and be sure to have plenty of milk handy. These chocolate chip cookies keep well in an air tight container. Guest at Tod Mountain ranch enjoy these chocolate chip cookies as a frequently and it's difficult to keep the cookie jar full!

Chocolate Chip Cookies
Evil Chocolate Chip Cookies
1 cup butter
1/2 cup cocoa
1 cup sugar
1 3/4 cup flour
1/2 cup brown sugar
1/4 tsp. baking powder
1 tsp. vanilla
1 cup chocolate chips
1 egg
1 cup chopped walnuts or dried cranberries
2 tbsp. milk

Cream butter and sugars. Add egg, milk and vanilla. Slowly add dry ingredients. Stir in chocolate chips and walnuts. Line baking sheet with parchment paper. Drop by tablespoon onto baking sheet. Bake at 350F (175C) for 12 minutes.
